At more than 2,350 metres above sea level in Harowelabu, Guji, Desta Ware Dole farms just two hectares of coffee. In Ethiopia, where lots often combine coffee from many smallholders, this level of single-farm focus is unusually rare.

One of two lots we purchased from this harvest, these 74110 cherries undergo a 96-hour anaerobic natural process. Ripe cherries are sorted and measured for Brix before being sealed in fermentation vessels, kept cool and monitored for temperature throughout fermentation. They are then dried under shade for 15–20 days, building sweetness, clarity and complexity while preserving the coffee’s delicate character.

Together, extreme elevation, slow cherry maturation, careful anaerobic processing and shade-grown organic agriculture create a rare and highly distinctive expression of Ethiopian coffee: elegant, floral and deeply layered.

Desta Ware Dole works with a family-run coffee operation in Guji with a growing focus on traceable individual farm lots and carefully controlled processing, allowing coffees like Desta’s to be presented with a level of specificity that is still relatively unusual in Ethiopia.

For this release, Desta’s 74110 cherries undergo a 96-hour anaerobic natural process developed through Project Horizon Bloom, a year-long processing initiative informed by previous harvests and focused on Brix measurement, fermentation temperature and cooler fermentation environments.

Only ripe red cherries are selected and sorted before their Brix is measured. The whole cherries are then sealed in fermentation vessels and kept in a cool environment away from direct sunlight, with temperature monitored throughout the 96-hour fermentation. Once complete, the vessels are opened and the cherries are transferred to shaded drying beds, where they dry for approximately 15–20 days.

The process is intended to produce an expressive, balanced cup without allowing fermentation character to overwhelm the coffee itself. The liquid produced during fermentation is drained and retained for use in a separate Mosto process, making this 96-hour lot the starting point for another processing approach from the same harvest.

The 2025/26 harvest presented its own challenges. Drought followed by prolonged heavy rainfall delayed ripening across the region, while Desta’s farm, sitting above 2,350 metres, naturally experiences slower cherry maturation. Coffee for this lot was ultimately harvested between 25 December and 10 January.

Desta grows the Ethiopian 74110 variety under shade without synthetic fertiliser. These farming practices predate the farm’s formal Ecocert Organic certification and reflect the low-input agricultural traditions common throughout Guji.

At this elevation, indigenous forest canopies provide natural shade, help moderate temperature and contribute to soil health. Protecting these forest systems, biodiversity and water sources is central to sustaining both the landscape and the conditions that allow distinctive coffees from Guji to continue being grown.
