Henry Ramirez’s La Esperanza farm is an 8-hectare organic coffee haven nestled in the mountainous region of Bilbao, Planadas, Tolima.

This Washed Caturra microlot is a shining example of Henry’s meticulous craftsmanship. Grown at 1,850 masl, the cherries are selectively handpicked, fermented in-cherry for 12 hours in GrainPro bags, then depulped and fermented for an additional 24 hours before undergoing a precise double-washing process. The beans are then carefully dried over 15 days to ensure a clean and vibrant flavor profile.

We are proud to welcome Henry Ramirez to our coffee line up for third season, and also celebrate his continued success as a Regenerative Organic Certified farm.

High in the mountains of Bilbao, Planadas, Tolima, Henry Ramirez’s La Esperanza farm is a beacon of organic coffee cultivation. Spanning 8 hectares at 1,850 meters above sea level, the farm is a thriving ecosystem where Henry balances tradition, sustainability, and innovation. As a third-generation coffee producer, he grew up surrounded by the rhythms of coffee farming, but in 2015, he made a pivotal decision to transition to organic agriculture. His goal was clear: to protect the health of the soil, preserve local water sources, and cultivate coffee in harmony with nature.

Henry’s passion for sustainability extends beyond his farm, as he actively conserves the surrounding forest, home to native wildlife like parrots, squirrels, and guatines. His organic approach eliminates synthetic chemicals, relying instead on natural fertilizers like Nutrilom and Patertkali to enrich the soil and ensure long-term productivity.

In 2024, Henry Ramirez achieved Regenerative Organic Certification (ROC), marking a significant milestone for both his farm, La Esperanza, and the broader coffee-growing community in Bilbao. This certification goes beyond organic standards, ensuring the highest levels of soil regeneration, biodiversity conservation, and social responsibility. By embracing ROC principles, Henry is not only improving soil health and water retention on his farm but also setting an example for sustainable coffee production in the region. His commitment helps protect local forests, wildlife, and future generations of farmers while reinforcing the value of ethically and ecologically responsible coffee in the global market.

For Henry, producing organic coffee is not just about quality—it’s about respect for the environment and the people who drink it. With each cup, he hopes consumers taste not only the rich, nuanced flavors of his carefully cultivated coffee but also the dedication and care behind every step of its journey.
