Brazil Sítio Baixadão (Natural) Espresso
Sweet plum on the nose, leading to caramelised fig and cherry marmalade notes. A round, buttery mouthfeel, with walnuts and cane sugar in the finish.
For the fourth consecutive year, we are excited to welcome back coffee from Sítio Baixadão. This coffee is the product of the da Silva family, who 20 years ago decided to move from rice production to coffee cultivation; nowadays coffee is the family’s primary source of income.
Today, producer Sebastião Alfonso da Silva has established Sítio Baixadão as one of the leading coffee farms in the world. From humble beginnings, they made history in 2014 when they won the Cup of Excellence in Brazil with the highest scoring coffee ever in the competition, and again in 2015 when they took the top prize in the naturals competition.
For 20 years the da Silva family have committed themselves to maintaining a sustainable farm by preserving natural resources and using the most efficient and modern agricultural practices. Aided by the unique micro-climate in the Mantiqueira mountains and by high-altitude fields that are protected from wind and inclement weather, they are able to consistently produce incredibly high quality coffee.
While for most farms in Brazil the harvest ends in September, the da Silva family are able to harvest coffee as late as December due to later flowering of their plants, slower fruit maturation, and their decision to extend the harvest in pursuit of quality. The have even built a small room above the wet mill where Sebastião stays, during the harvest, to ensure that everything is processed to his standards. The result is an incredible sweet and complex coffee.
