We are pleased to welcome a new producer in 2022, Sr. Mauricio Penalba, who owns and operates Finca La Innovacion located in Marcala, Honduras. This naturally processed Catuai & Icatu microlot was harvested in March 2021, at the peak of Marcala’s coffee season.
As the name of the farm suggests, La Innovacion is dedicated to the continual improvement and discovery of new coffee farming and processing methods. Mauricio is a 100% Certified Organic producer, who grows a range of varieties on his farm including Catuai, Bourbon, Geisha and Icatu. Grown at 1,250 masl, this small 2 hectare plot is producing some of the best natural and experimental coffees available from Honduras.
This microlot is hand picked before being hand sorted and then dried as whole fruit on raised beds in controlled drying houses. The immaculate picking, sorting and processing of this coffee shines through in its clean, rich and complex flavour profile.
