Hector Fajardo manages his 100% Caturra microlot in Acevedo; a small town in the Huila region, just 40km from the highly regarded speciality coffee producing municipality of Pitalito.

Southwest of Bogota, and nestled amongst the Colombian Andes, Huila is one of the most important coffee growing regions in Colombia, boasting ideal climate conditions and nutrient rich volcanic soils.

Once harvested, cherries are first exposed to an aerobic fermentation for 12 hours before being pulped and exposed to an underwater fermentation for a further 20 hours. Afterwards, the coffee is sun-dried in parabolic dryers until the ideal moisture content is reached.
