Burundi Mbirizi Gatara Filter

    This coffee has been grown by smallholder farmers of the Gatara community (located on the Gatara hill) and processed at the Mbirizi washing station. Farms in Gatara are small, often below one hectare, and cherries are picked by the family members in the afternoon or on Saturdays. The handpicked cherries are delivered to Mbirizi by foot or bicycle, or to the closest collection point as organised by the washing station owner, Salum Ramadhan.

    To insure quality and consistency, Mbirizi has strict protocols in place for all arriving cherries; coffee is first sorted by farmers on raised tables or small floatation tanks, where any floaters are returned to the farmers, before dedicated workers sort for ripeness and density.

    The coffees are dry fermented for 8-12 hours, and then wet fermented for a further 8-12 hours, before being washed, graded and soaked.

    Established in 2014, Mbirizi washing station is the second of four stations owned by producer Salum Ramadhan. Extremely well organised, Salum has invested heavily in Mbirizi, installing shade drying facilities and building a small farm with bee hives, cows for milk production and manure for organic compost.
